Tallink’s new menu combines Nordic flavors from the garden and forest

 

Tallink has launched a new five-course gourmet menu. The refined Menu Nordic combines northern flavors, seasonal ingredients, and flavors from the garden and forest. Menu Nordic will be available on the Tallinn-Stockholm and Helsinki-Stockholm routes from May 17 to September 13, 2023.

“The menu is inspired by seasonal Nordic ingredients that are available in the spring and summer from the garden and forest. Examples of these include dandelion, nettle, dogwood, rhubarb, asparagus and strawberries. For example, the sauce for the cod dish is seasoned with a dandelion syrup. Dandelion is generally considered a weed, but it brings an excellent flavor to food and fits fantastically with a cod dish,” comments Jonas Niklasson, Silja Symphony’s kitchen manager and creator of the new menu.

“The new Menu Nordic brings back memories from my childhood and Swedish food heritage. The menu includes, for example, roast veal, the recipe of which is adapted from my grandmother’s way of preparing veal on Sundays. I want to thank our entire kitchen team. I’m really happy with the new Menu Nordic and I hope our customers like it too,” says Niklasson.

The five-course Menu Nordic is available at Silja Serenade and Silja Symphony’s fine dining restaurant Bon Vivant and Baltic Queen’s Gourmet restaurant. A vegan version of the menu, Menu Nordic Vegan, is also available. The menus can be supplemented with a wine package selected by the ships’ professional sommeliers. The price of the five-course menu is 85 euros without drinks, and the price of the vegan menu is 75 euros. The price of the wine package is 50 euros, and the price of the non-alcoholic wine and mocktail package is 35 euros.

 

MENU NORDIC

Tartar of Swedish beef, fennel emulsion, pickled fennel, cucumber, mustard seeds, quail egg, and honeydew

Charred and salted monkfish, cauliflower puree, mustard vinaigrette seasoned with coffee, and a salad of new potatoes and deep-fried onions

Steamed cod fillet and fried scallop, dandelion-flavoured white wine sauce, nettle pesto, tomato, dandelion capers and new potatoes

Oven-roasted veal with apple cider cream sauce, smoked pork flank, fried potatoes and lightly pickled cucumber

Rhubarb kiisseli with strawberry yogurt ice cream, stewed rhubarb and vanilla meringue

 

MENU NORDIC VEGAN

Vegetable cocktail with fried and marinated tofu, avocado, asparagus and coffee-flavoured mustard vinaigrette

Potato-truffle croquette with roasted green asparagus, cauliflower puree, hazelnuts and cold-pressed rapeseed oil

Terrine with asparagus, cauliflower, chickpeas and yellow beetroot, a broth of roasted vegetables and garlic, sunflower seeds and fried onion

Salt-fried collard greens glazed with bearberry pesto, mung bean puragu with potatoes and spinach, and a creamy chanterelle sauce

Rhubarb kiisseli with strawberry yogurt ice cream, stewed rhubarb and vanilla meringue

 

The new Menu Nordic will be available from May 17 to September 13, 2023.
